• Norman Hardie Winery (PEC): A true specialist in Chardonnay and Pinot Noir. Their wines are celebrated for their laser-like acidity and mineral precision.
• Bachelder (Niagara): Thomas Bachelder's micro-négociant project is all about mapping Niagara's terroir. His single-vineyard Chardonnay, Pinot Noir, and Gamay see minimal intervention and long neutral-barrel aging, resulting in wines that are transparent, elegant, and unmistakably site-specific.
